Combine the pork and red wine vinegar in a substantial mixing container. Add an assortment of seasonings, including parsley, garlic powder, onion powder, basil, salt, black pepper, paprika, red pepper flakes, fennel seed, brown sugar, oregano, and thyme. Divide the sausage into three equal parts. Shape each portion into a cylindrical log, wrap it securely in plastic wrapping, and place it inside a zip-top bag. Store the logs refrigerated for at least 12 hours prior to cooking.
