- 1/2 cup dry red wine
- 8 ounces fresh tortellini pasta
- 1 cup sliced carrots
- 2 cups stewed tomatoes
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 8 ounces tomato sauce
- 1 1/2 cups sliced zucchini
- 2 green bell peppers, seeded and cubed
- 3 tablespoons chopped fresh parsley

Begin by removing the casings from the sausage, then brown it in a pan until it reaches a crumbly state. Next, carefully lift the cooked sausage out of the pot and set it aside for later use. Reserve 1 tablespoon of the remaining drippings from the pot.

In the same pot, sauté the onion and garlic until they become tender and fragrant. Use these reserved drippings to add flavor to your dish.

Add 1 tablespoon of broth, 1 tablespoon of water, and 1 tablespoon of wine to the pot. Then, add the chopped carrots, canned tomatoes, fresh basil, dried oregano, tomato sauce, and the previously cooked sausage.

Bring the mixture to a rolling boil, then reduce the heat and let it simmer uncovered for 30 minutes.

Add sliced zucchini, green peppers, chopped parsley, and the cooked tortellini to the pot. If using fresh tortellini, simmer for an additional 25 minutes with the lid on; if using frozen tortellini, increase the cooking time to 45 minutes with the lid on.
