  • 1 pound ground hot Italian sausage
  • 4 red potatoes, or more to taste, chopped
  • 1 large bunch kale, stems removed and chopped
  • 1 pound fresh mushrooms, quartered
  • 1 cup half-and-half
  • salt and ground black pepper to taste

Heat a saucepan over low-medium heat, adding butter until it starts to melt. Using a spoon, mix in flour and continue stirring until the mixture forms a smooth, golden-brown paste, approximately 3 minutes. Gradually add chicken broth and water to the mixture while whisking constantly, bringing it to a gentle boil over medium heat. Introduce the onion, garlic, thyme, bay leaves, and sage into the pot; cook until the mixture thickens and the onion becomes tender, taking around 10 to 15 minutes.

In a separate pan, heat it over high-medium heat. Add the sausage and stir constantly until it's nicely browned and crumbly, about 5 to 7 minutes. Transfer the cooked sausage to a plate lined with paper towels to remove excess moisture.

Combine the cooked sausage, potatoes, kale, and mushrooms in the pot; simmer until the potatoes are tender, approximately 45 minutes. Add half-and-half to the mixture and season with salt and black pepper
