Italian Sausage and Bean Stew
Ingredients
  • 1 pound Italian turkey sausage, casings removed
  • 2 carrots, thinly sliced
  • 1 large onion, chopped
  • 1 cup thinly sliced mushrooms
  • 1/3 cup chopped fresh parsley, divided
  • 1 clove garlic, minced
  • 3 cups water
  • 1 (15 ounce) can garbanzo beans (chickpeas)
  • 2 cubes beef bouillon
  • 1/2 teaspoon dried sage
  • salt and ground black pepper to taste

Preheat a cooking vessel over an intermediate temperature setting. Sear the turkey sausage in the hot pot until it reaches a nicely browned and crumbly state, taking approximately 5 to 7 minutes.

Combine the carrots, onion, mushrooms, a quarter cup of fresh parsley leaves, and minced garlic into the sausage. Continue to cook and stir until the onion becomes soft and tender, requiring about 7 to 10 minutes.

Add water, garbanzo beans with their accompanying liquid, beef bouillon cubes, and dried sage leaves to the sausage mixture. Bring the entire mixture to a rolling boil, cover the pot with a lid, and lower the heat to a low simmering temperature. Allow the carrots to become tender, which should take around 10 minutes.

Remove any excess fat that has accumulated at the surface of the pot by skimming it off. Season the dish with salt and pepper to taste, then garnish with the remaining four teaspoons of fresh parsley leaves.
