Italian Pasta Medley
Ingredients
  • 1 (16 ounce) package rotelle pasta
  • 1 cup broccoli florets
  • 1 cup chopped carrots
  • 1 cup chopped tomatoes
  • 3/4 cup grated Parmesan cheese
  • 1 (6 ounce) can black olives, drained
  • 1 (6 ounce) package pepperoni
  • 1 cup Italian-style salad dressing (such as Olive GardenĀ®), divided

Boil a substantial container of salted water until it reaches its maximum temperature. Submerge the rotelle pasta in the boiling water, gently stirring every now and then, until it reaches your desired level of doneness but still retains a slight firmness in the center, approximately 12 minutes. Drain the pasta.

Combine the rotelle pasta with broccoli, carrots, tomatoes, Parmesan cheese, olives, and pepperoni in a large serving container. Pour half of the dressing over the salad mixture and mix until everything is evenly coated. Cover the container with plastic wrap and refrigerate for an extended period of time, ideally 8 hours or overnight. Pour the remaining dressing over the salad and stir until well combined.
