- 2 tablespoons finely chopped fresh oregano
- 2 tablespoons finely chopped fresh thyme
- 2 cloves garlic cloves, pressed
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

Boil a substantial container of salted water until it reaches its maximum temperature. Introduce sliced mushrooms into the boiling liquid and cook for approximately 10 minutes, or until they have lost their firmness. Remove the mushrooms from the water with a slotted spoon and allow them to cool down completely.

In a large container, merge olive oil, white wine vinegar, finely chopped red onion, dried oregano leaves, fresh thyme sprigs, minced garlic, salt, and black pepper. Close the container with a lid and vigorously shake it until all the ingredients are well combined. Add the cooked mushrooms to the mixture and refrigerate for at least 5 hours, allowing the flavors to meld together. Before serving, remove the container from the refrigerator 10 minutes prior to presentation.
