Italian Garbanzo Bean Soup

  • 1 (14.5 ounce) can peeled and diced tomatoes
  • 1 teaspoon olive oil
  • 2 (15.5 ounce) cans garbanzo beans
  • salt and pepper to taste
  • 2 sprigs fresh rosemary
  • 1 cup acini di pepe pasta

Combine the tomatoes, olive oil and 1 1/2 cans of beans in a large saucepan. Heat the mixture over high heat until it reaches a rolling boil.

Mash the remaining 1/2 can of garbanzo beans using a blender or food processor, and add the pureed mixture back into the saucepan. Gently place the sprigs of rosemary into the pan, making sure not to break off any leaves.

Add acini de pepe pasta to the saucepan and continue to cook until the pasta is tender, stirring occasionally to prevent it from sticking.

Once the pasta is cooked, carefully remove the rosemary sprigs before serving and season the dish with salt and pepper to taste.
