Ingredients
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup chopped fresh parsley
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 hard-boiled egg, chopped
- 1 pinch salt and ground black pepper
- 2 pounds flank steak, pounded until thin
- 5 toothpicks, or as needed
- 1 (8 ounce) can tomato sauce
- 1 tomato, chopped, or more as needed
- 1 pinch white sugar
Instructions
1
Heat 2 tablespoons of olive oil in a large, deep pan over medium heat. Introduce the sliced onion into the pan and cook while stirring until it becomes soft and translucent, taking roughly 10 minutes. Enhance the dish with a pinch of salt and pepper to taste.
2
Combine chopped parsley, grated Parmesan cheese, minced garlic, a hard-boiled egg, a small amount of salt, and black pepper in a bowl. Drizzle about 1 tablespoon of olive oil into the mixture, stirring constantly until it reaches a sticky consistency.
3
Spread the parsley filling in an even layer on top of the flank steak. Roll the steak into a compact, cylindrical shape; secure it with toothpicks to prevent the filling from escaping.
4
Add the remaining 1 tablespoon of olive oil to the pan with the cooked onion, stirring occasionally until heated through. Introduce the steak roll into the pan and turn it frequently until browned on all sides, taking 2 to 3 minutes per side. Add the remaining tomato sauce, chopped tomatoes, and sugar; simmer over very low heat until the steak is cooked through and the sauce has slightly thickened, taking 1 to 1 1/2 hours.
