Ingredients
- 2 pounds ricotta cheese
- 6 large eggs
- 1 pound cooked ham, chopped
- 1/2 pound Genoa salami, chopped
- 1/2 pound mozzarella cheese, grated
- 1/4 pound prosciutto, chopped
- 4 (9 inch) unbaked pie crusts
- 1/4 cup grated Parmesan cheese
Instructions
1
Preheat your oven to 325 degrees Fahrenheit, which is equivalent to 165 degrees Celsius. This initial step sets the stage for the subsequent preparation of your dish.
2
In a large mixing bowl, take the ricotta cheese and begin by placing it within. Using an electric mixer on low speed, gently incorporate the eggs one at a time.
3
Then, add diced ham, salami, shredded mozzarella cheese, and chopped prosciutto to the bowl. Mix these ingredients until they are fully incorporated into the ricotta mixture.
4
Next, prepare two 9-inch pie pans by lining them with pastry dough. Divide the ricotta mixture evenly between the two pans.
5
Following this, sprinkle a generous amount of grated Parmesan cheese over each pie. Then, cover the top with additional pastry dough and crimp the edges to seal.
6
Finally, cut a few steam vents in the tops of the pies to allow for even cooking. Place them in the preheated oven and bake until the pastry crust is golden brown, approximately 1 hour.
7
Once baked, remove the pies from the oven and let them cool on wire racks.
