Ingredients
- 1 cup water
- 1/3 cup white sugar
- 1 cup strong espresso coffee
- 1 teaspoon vanilla extract
- 1 cup whipped cream, or to taste

Heat water and sugar in a compact saucepan over high heat; continue to cook until the temperature reaches 250 degrees Fahrenheit (or 120 degrees Celsius), approximately 5 minutes.

Take the saucepan off the heat source; add coffee and vanilla extract. Pour the mixture into a metal container and blend it thoroughly. Allow the granita mixture to cool down to room temperature, roughly 10 minutes.

Transfer the cooled granita mixture into the freezer and let it freeze for an hour.

Remove the frozen granita from the freezer and vigorously stir it to break up any ice crystals that have formed. Repeat this process 4-5 times, with each cycle taking around 2 hours in total.

Prepare individual serving glasses by placing a spoonful of whipped cream into each one. Divide the granita mixture evenly among the glasses, then top with the remaining whipped cream.
