  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (14 ounce) can diced tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • salt and ground black pepper to taste

Begin by thoroughly washing and drying the chicken pieces to remove any impurities. Next, heat a generous amount of oil in a large skillet over a moderate temperature. Carefully add the chicken pieces and sear until they develop a golden brown color, approximately 4-5 minutes on each side. Remove the chicken from the skillet and set it aside.

In the same skillet, add the sliced mushrooms, chopped onion, and diced celery. Allow them to soften and release their flavors into the pan's natural juices, taking around 5 minutes. Introduce minced garlic and cook until its aroma fills the air, approximately 2 additional minutes.

Return the chicken to the skillet and pour in a small amount of white wine. Let it simmer until almost all the liquid has evaporated, roughly 2-3 minutes. Add diced tomatoes, chicken broth, chopped parsley, dried oregano, a pinch of pepper flakes, salt, and black pepper. Cover the skillet and let it simmer until the chicken is no longer pink at its core and the juices flow freely, approximately 30 minutes.
