Ingredients
- 6 cups day old Italian bread, torn into bite-size pieces
- 1/3 cup olive oil
- salt and pepper to taste
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 4 medium ripe tomatoes, cut into wedges
- 3/4 cup sliced red onion
- 10 basil leaves, shredded
- 1/2 cup pitted and halved green olives
- 1 cup fresh mozzarella, cut into bite-size pieces
Instructions
1
Preheat your oven to the high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Toss slices of bread with a generous amount of olive oil, salt, pepper, and minced garlic in a large container; spread them evenly on a baking sheet and bake in the preheated oven until they turn golden brown, taking around 5 to 10 minutes. Remove the bread from the oven and transfer it back into the container, allowing it to cool slightly.
3
In a small bowl, whisk together a quarter cup of olive oil and balsamic vinegar; set it aside for later use.
4
Add sliced tomatoes, chopped onion, fresh basil leaves, pitted olives, and shredded mozzarella cheese to the bowl with bread; toss gently with the prepared vinaigrette, allowing everything to meld together for 20 minutes before presenting.
5
Note: The vinaigrette is prepared ahead of time and can be stored in the refrigerator until it's needed.
