Italian Anise Pizzelle

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 6 eggs
  • 1 1/2 cups white sugar
  • 3/4 cup shortening (such as Crisco®), melted and cooled slightly
  • 2 tablespoons shortening (such as Crisco®), melted and cooled slightly
  • 1 tablespoon anise seeds, crushed
  • 1 teaspoon vanilla extract

Get your pizzelle iron ready by following the manufacturer's guidelines for preheating.

Combine 2 cups of flour and 1 teaspoon of baking powder in a mixing bowl to create the base ingredients.

Using an electric mixer, blend eggs and 1 cup of sugar in a large mixing bowl until they're fully incorporated. Add 3/4 cup plus 2 tablespoons of shortening and continue mixing on medium speed until the mixture is smooth. Gradually incorporate the flour mixture into the wet ingredients, blending on medium speed until everything comes together. Introduce anise seeds and vanilla extract into the batter using a spatula, gently folding them in.

Spoon a small amount of batter onto the preheated pizzelle iron and cook until it's golden brown, taking 30 to 40 seconds for the first batch or a few extra seconds for darker pizzelle.
