Island Oatmeal Cookies
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 1/2 tablespoons ground cinnamon
  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground allspice
  • 2 pinches salt
  • 1 cup margarine, softened
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 3 tablespoons molasses
  • 1 tablespoon vanilla extract
  • 1 1/2 cups quick cooking oats
  • 1 cup sweetened flaked coconut
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, take two baking sheets and give them a light coating of oil or cooking spray to prevent sticking.
3
In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt. Mix these dry ingredients until they are well combined.
4
Take a large mixing bowl and use an electric mixer to cream together the margarine, white sugar, and brown sugar until you achieve a smooth consistency.
5
Add the egg, molasses, and vanilla to the butter mixture and mix until everything is fully incorporated.
6
Mix in the flour mixture until a dough forms, then gently fold in the oats and coconut until they are just combined.
7
Use your hands to shape the dough into 1 1/4-inch balls, leaving about 2 inches of space between each cookie on the prepared baking sheets.
8
Place the cookies in the preheated oven and bake until the edges are lightly browned, which should take around 12 minutes.
9
Once the cookies are done baking, allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
