- 1 cup margarine, softened
- 1 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 3 tablespoons molasses
- 1 tablespoon vanilla extract
- 1 1/2 cups quick cooking oats
- 1 cup sweetened flaked coconut

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.

Next, take two baking sheets and give them a light coating of oil or cooking spray to prevent sticking.

In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt. Mix these dry ingredients until they are well combined.

Take a large mixing bowl and use an electric mixer to cream together the margarine, white sugar, and brown sugar until you achieve a smooth consistency.

Add the egg, molasses, and vanilla to the butter mixture and mix until everything is fully incorporated.

Use your hands to shape the dough into 1 1/4-inch balls, leaving about 2 inches of space between each cookie on the prepared baking sheets.
