  • 1 pound pork sausage
  • 3 (26 ounce) jars spaghetti sauce, divided
  • 2 (16 ounce) containers ricotta cheese
  • 2 (8 ounce) packages grated Parmesan cheese
  • 2 (8 ounce) packages shredded mozzarella cheese
  • 1 (8 ounce) package spinach, rinsed and chopped

Begin by filling a large pot with salted water and placing it on the stovetop to reach its boiling point. Once boiling, cook lasagna noodles in the water, stirring occasionally, until they reach a tender yet firm texture, approximately 8 minutes. Remove the noodles from the water and lay them flat on a paper towel to dry.

While the noodles are cooking, cook sausage in a large skillet over medium heat until it reaches a browned and crumbly state, taking around 7 to 10 minutes. Set the cooked sausage aside.

Meanwhile, combine two jars of spaghetti sauce with ricotta cheese in a large bowl. In another bowl, mix together Parmesan and mozzarella cheese.

Add the cooked sausage and spinach to the ricotta mixture, stirring until well combined. Gradually add all but 1 cup of the Parmesan-mozzarella mixture to the ricotta mixture, blending until smooth.

Preheat your oven to 425 degrees F (220 degrees C).

To assemble the lasagna, spread a thin layer of spaghetti sauce from the remaining jar at the bottom of a 9x13-inch baking dish. Arrange 3 to 4 lasagna noodles lengthwise and side-by-side on the sauce, followed by another layer of 3 to 4 noodles in a staggered pattern. Add a generous helping of the sausage-ricotta mixture on top.

Repeat this layering process two more times. Finally, place the remaining noodles on top of the lasagna, pour over the remaining spaghetti sauce, and cover with a reserved 1 cup of Parmesan-mozzarella mixture.

Bake the lasagna in the preheated oven until it reaches a golden brown color, approximately 45 minutes.
