Irish Whiskey Loaf Cake

  • 1 (18.5 ounce) package yellow cake mix
  • 2 (3.9 ounce) packages instant vanilla pudding mix
  • 1 cup chopped walnuts, divided
  • 1 cup Irish whiskey, divided
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon water

Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).

To prevent the mini loaf pans from sticking, lightly coat them with cooking spray.

In a large mixing bowl, combine the cake mix, pudding mix, and 1/2 cup of chopped walnuts.

In a separate bowl, whisk together 1/2 cup of Irish whiskey, milk, and oil until well combined. Whisk in the eggs to create a smooth mixture.

Gradually pour the wet ingredients over the dry ingredients and mix until everything is fully incorporated.

Divide the batter evenly among the prepared mini loaf pans.

Place the prepared loaf pans in the preheated oven and bake until a toothpick inserted into the center comes out clean, approximately 20 minutes.

Allow the loaves to cool for a short period of time, about 5 minutes.

While the mini loaves are cooling, melt butter in a small saucepan over medium heat.

Combine brown sugar with the melted butter and whisk until smooth. Add the remaining 1/2 cup of chopped walnuts, 1 tablespoon of Irish whiskey, and water.

Cook over medium heat, constantly whisking the mixture until it reaches a smooth consistency, about 3 to 5 minutes.

Remove from heat and whisk in the remaining whiskey.

Remove the cakes from their pans and invert them onto a wire rack set over a baking sheet.

Use a toothpick to create small holes across the top of each cake.

Pour the whiskey topping over the cakes and allow them to absorb the liquid as they continue to cool.
