Irish Soda Bread with Raisins and Caraway Seeds
Ingredients
  • 1/2 cup white sugar
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 cups raisins
  • 1 tablespoon caraway seeds
  • 2 eggs, lightly beaten
  • 1 1/4 cups buttermilk
  • 1 cup sour cream
Instructions
1
Preheat your oven to the recommended temperature of 350 degrees Fahrenheit (or 175 degrees Celsius).
2
Next, take a moment to prepare your baking vessel by greasing it with a non-stick coating.
3
In a separate bowl, whisk together the dry ingredients including 1 tablespoon of flour that will be reserved later.
4
Meanwhile, combine the remaining dry ingredients such as sugar, baking powder, baking soda, salt, raisins and caraway seeds in the same bowl.
5
In a separate small bowl, whisk eggs together with buttermilk and sour cream until well combined.
6
Gradually add the wet ingredients to the dry ingredients mixture, stirring until just moistened.
7
Then knead the dough in the bowl using a gentle folding motion, about 10 to 12 times.
8
The dough will be quite sticky at this stage, so don't worry if it looks that way.
9
Now, shape the dough into a round loaf and place it in the prepared baking vessel or cake pan.
10
Using your fingers, gently press the dough down into the vessel to ensure an even bake.
11
Cut a 4x¾ inch deep slit in the top of the bread, being careful not to cut too deeply.
12
Dust the exposed top with the reserved 1 tablespoon of flour.
13
Finally, bake the bread in the preheated oven for a period of 65 to 75 minutes.
14
Once done, let the bread cool completely before transferring it to a wire rack for further cooling.
