Irish Sausage and Bacon Stew
Ingredients
  • 1 pound Irish sausages
  • 1 pound bacon
  • 1 pound potatoes, peeled and cut into large dice
  • 2 large onions, roughly chopped
  • 6 carrots, roughly chopped
  • 1 quart chicken stock
  • 1 quart whole milk
  • salt and pepper to taste

Preheat the Dutch oven over high heat on your stovetop. Sear sausages and bacon in the Dutch oven until the bacon reaches a golden brown, then remove it from the heat to drain excess fat - keep 1 tablespoon of the remaining drippings. Chop the cooked bacon into smaller pieces and cut the sausages in half.

Reheat the reserved fat in the Dutch oven over a low flame, accompanied by the chopped bacon and halved sausages. Add sliced onions and carrots to the pot, stirring occasionally until they become soft and translucent, approximately 7-10 minutes. Introduce the stock and milk into the mixture, stirring gently to combine. Allow the mixture to simmer over low heat until the potatoes are tender enough to be pierced with a fork, taking around 30-45 minutes. Season the dish with salt and pepper before serving.
