  • 2 cups buttermilk
  • 3 tablespoons dark molasses
  • 3 cups whole wheat flour
  • 1 cup all-purpose flour, plus extra for dusting
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cream of tartar

Combine rolled oats, buttermilk, and molasses in a large bowl until they are completely merged.

Combine whole wheat flour, all-purpose flour, salt, baking soda, and cream of tartar in a separate bowl until they are well incorporated; pour the flour mixture into the buttermilk mixture and stir just until it reaches a moist consistency.

Transfer the dough to a lightly dusted work surface and knead 3 or 4 times until it forms a cohesive mass.

Divide the dough in half; shape each half into a 6-inch round loaf.

Use a sharp knife to make deep, diagonal cuts in each loaf, cutting 1-inch deep.

Cover each loaf with plastic wrap and allow it to rest at room temperature for at least 12 hours, allowing it to ferment.

Preheat the oven to 400 degrees F (200 degrees C).

Arrange the loaves on an ungreased baking sheet.

Bake the loaves for 15 minutes and then reduce the heat to 350 degrees F (175 degrees C). Continue baking until the loaves are browned and make a hollow sound when tapped on the bottom, approximately 20 more minutes.

Allow the breads to cool for 10 minutes before slicing. To serve, slice each loaf 3/4-inch thick all the way across and then cut the slices in half.
