Instant Pot Wonton Dumpling Soup
Ingredients
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • 1 tablespoon finely chopped ginger
  • 1 teaspoon finely chopped garlic
  • 10 cups low-sodium chicken broth
  • 1 1/2 pounds frozen wontons
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt, or more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups thinly sliced bok choy
  • 2 tablespoons low-sodium soy sauce (such as Bragg®)
  • 4 green onions, thinly sliced
Instructions
1
Turn on the pressure cooker, choosing the Saute mode if necessary to adjust heat levels. Pour sesame oil and olive oil into the pot, followed by sliced ginger and minced garlic. Cook until the mixture is fragrant without turning brown, approximately 1 minute.
2
Next, add chicken broth, wontons, chopped parsley, salt, and pepper to the pot. If some wontons have merged together, gently break them apart with a spoon. Close and secure the lid of the pressure cooker.
3
Switch to the Soup function on the pressure cooker, setting a 2-minute timer. Allow about 10-15 minutes for the pressure to build up.
4
Release the pressure slowly using the quick-release method as indicated by the manufacturer's instructions, taking around 5 minutes. Remove and unlock the lid.
5
Add chopped bok choy to the pot, along with a few dashes of soy sauce. Let it sit for 3 minutes, stirring occasionally to ensure everything is well combined.
6
Taste the soup and adjust seasoning as needed by adding more salt if required.
