Instant Pot Venison Roast
Ingredients
  • 1 tablespoon olive oil
  • 1 (2 pound) venison roast
  • 2 cups water
  • 1 (1.5 ounce) package beef stew seasoning mix (such as McCormick®)
  • 1 pound baby potatoes (such as Little Potato Company®), halved
  • 1 (8 ounce) package baby carrots
  • salt and ground black pepper to taste

Turn on your pressure cooker and switch it to its sauté mode. Heat some olive oil in the pot for 1 minute, then carefully place your venison roast into the hot oil and sear it from both sides for 2 minutes each. Switch off the sauté mode.

Next, mix some water and stew seasoning in a small bowl and whisk it until the seasoning is fully incorporated. Pour this mixture over the venison roast, making sure it's evenly coated.

Close and secure the lid of your pressure cooker. Follow the manufacturer's guidelines to set it to high pressure, and then set a timer for 120 minutes. Allow about 10 minutes for the pressure to build up.

Once you've released the pressure using the quick-release method, about 5 minutes should have passed. Now, add some potatoes and carrots to the pot, spooning their sauce over them to coat everything evenly.

Close and secure the lid again. Set your pressure cooker to high pressure once more, and set a timer for 10 minutes. Allow about 10 minutes for the pressure to build up again.

Finally, release the pressure using the natural-release method, and let it take about 15 minutes. Season your dish with some salt and pepper to taste
