Instant Pot Veggie Lentil Soup
Ingredients
  • 3 tablespoons olive oil
  • 1/2 onion, finely diced
  • 1 carrot, peeled and diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/4 teaspoon fennel seeds
  • 1/8 teaspoon chile powder
  • 1 tablespoon tomato paste
  • 4 cups vegetable broth
  • 3 cups water
  • 1 1/4 cups green lentils
  • 1 small yellow squash, diced
  • 1 cube vegetable bouillon
  • 1 lemon, juiced
  • 1 cup chopped kale, or to taste

Turn on your pressure cooker and switch it to its Sauté mode. Heat some olive oil in the pot for 3 minutes, then add sliced onions, chopped carrots, diced celery, and minced garlic. Cook until the onions are soft and translucent, taking around 4 to 5 minutes.

Add a blend of warming spices - cumin, coriander, turmeric, salt, white pepper, fennel seeds, and chili powder - to the pot. Cook for an additional 2 minutes, stirring constantly.

Next, stir in a concentrated paste made from dried tomatoes. Then, pour in your chosen broth and water to create the base of the soup.

Add cooked lentils and diced squash to the pot, followed by a cube of bouillon for added flavor. Make sure to scrape the bottom of the pot to remove any browned bits.

Switch the cooker back into its normal mode by canceling the Sauté function.

Close and secure the lid tightly, then set the pressure cooker to high according to its manufacturer's instructions. Set a timer for 8 minutes, allowing the pressure to build up.

After 10 to 15 minutes, release the pressure using the natural-release method as per the manufacturer's instructions. Open the valve to let out any remaining steam, taking about 5 minutes.

Unlock and remove the lid from the pressure cooker.

Add a squeeze of fresh lemon juice to the soup, then toss in some chopped kale leaves on top. Replace the lid and let the kale steam for about 5 minutes.

Finally, remove the lid again to adjust any seasonings you desire before serving.
