Instant Pot Tomato Swiss Steak
Ingredients
  • 1 1/2 pounds bottom round steak, 1 inch thick and trimmed of fat
  • salt and freshly ground black pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons avocado oil, divided, or as needed
  • 1 green bell pepper, chopped
  • 1 medium onion, chopped
  • 1/2 cup carrot, chopped
  • 1/2 cup chopped celery
  • 2 cloves garlic, finely chopped
  • 1/4 cup Merlot wine
  • 2 3/4 cups canned chopped Italian-style tomatoes in juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon paprika

Prepare the steak for cooking by gently patting it dry with paper towels and then cutting it into four equal-sized pieces. Sprinkle both sides of the steak pieces with salt and black pepper to enhance flavor.

Prepare a shallow dish by placing an adequate amount of flour inside. Gently coat each piece of steak in the flour, making sure to remove any excess.

Activate a versatile pressure cooker, such as an Instant Pot, and choose the Sauté function to initiate cooking. Heat 1 tablespoon of avocado oil in the pot, allowing it to reach a high temperature. Cook the steak pieces in batches until they are nicely browned on both sides, approximately 2 minutes per side. Transfer the cooked steak to a warm plate and set it aside for later use.

Add an additional 1 tablespoon of avocado oil to the pot, then sauté sliced bell pepper, onion, carrot, and celery in hot oil until the onion becomes soft and translucent, typically taking 3 to 4 minutes. Introduce minced garlic into the pot and cook until fragrant, approximately 1 minute. Deglaze the pot with a splash of wine to release any remaining flavors from the previous cooking process. Combine diced tomatoes, Worcestershire sauce, 1 teaspoon of salt, dried oregano, and paprika in the pot. Return the cooked steak pieces to the pot and gently press them into the tomato mixture.

Close and secure the lid of the pressure cooker, then select a manual pressure setting according to the manufacturer's instructions. Set the timer for 30 minutes, allowing the steak to cook thoroughly.

Allow the pressure inside the cooker to release naturally according to the manufacturer's instructions, approximately 5 minutes. Carefully open the valve to release any remaining pressure, which should take about 5 minutes more. Unlock and carefully remove the lid of the pressure cooker to reveal your finished dish
