Ingredients
- 1 (1 ounce) package onion soup mix
- 1 (6 pound) turkey breast, thawed
- 2 ribs celery, cut into large chunks
- 1 onion, cut into large chunks
- 1 cup chicken broth
- 2 tablespoons water
- 1 tablespoon cornstarch, or more as needed

Dust the entire surface of the turkey breast with onion soup mix and place it inside an electric pressure cooker, such as Instant Pot. Add the sliced celery and onions around and on top of the turkey, covering it completely. Next, pour the chicken broth over the turkey to ensure everything is well-coated.

Close the lid and secure it firmly. Choose the high or low pressure setting on the Poultry function, following the manufacturer's guidelines for optimal results. Allow the turkey to cook until its juices run clear, which should take approximately 30 minutes.

After cooking, allow the pressure to release naturally, following the manufacturer's instructions for about 20 minutes. Remove the turkey from the pressure cooker and slice it into thin pieces, covering them to keep warm.

Switch the pressure cooker to its Sauté function. In a small bowl, whisk together water and cornstarch until well-combined. Add a small amount of hot liquid from the pot to the bowl and stir until smooth. Pour this mixture back into the pressure cooker and whisk until the gravy thickens to your liking, taking around 3 minutes.
