Ingredients
- 2 bone-in, skin-on chicken breasts (about 2 pounds total)
- 1 tablespoon Cajun seasoning, or more to taste
- salt and freshly ground black pepper to taste
- 1 cup chicken broth
Instructions
1
Season chicken breasts with a blend of spices, including the pungent flavors of Cajun seasoning, as well as a pinch of salt and pepper to enhance their natural taste.
2
Next, position a heat-diffusing trivet in the bottom of your pressure cooker, a versatile kitchen appliance such as an Instant Pot. Fill the pot with chicken broth and gently place your seasoned chicken breasts inside. Close the lid securely to contain the ingredients, then follow the manufacturer's guidelines for setting high pressure and timing - in this case, a 10-minute timer. Allow the pressure to rise naturally over the next 10-15 minutes, as this will help to build up steam within the cooker.
3
Once the pressure has built, use the natural-release method recommended by your Instant Pot's manufacturer to allow the steam to escape over a period of about 10 minutes. Subsequently, carefully release any remaining pressure using the quick-release method, which should take around 5 minutes. Once you've unlocked and removed the lid, proceed to the next step.
4
Position a rack about 6 inches from the heat source in your oven, and preheat its broiler to a high temperature. Place the cooked chicken breasts on a baking sheet, and subject them to the broiler's heat until their skin is nicely browned - a process that should take around 4 minutes.
