Ingredients
- 1/2 cup distilled white vinegar
- 1/4 cup soy sauce
- 2 tablespoons minced garlic
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon black peppercorns, roughly cracked
- 2 bay leaves
- 1 large onion, sliced
- 1 1/2 pounds bone-in, skin-on chicken thighs
- 1 tablespoon chopped scallions

Combine vinegar, soy sauce, minced garlic, olive oil, brown sugar, and crushed peppercorns in a medium-sized bowl until the sugar is fully incorporated. Add bay leaves to the mixture and stir well.

Place a layer of sliced onions at the bottom of a pressure cooker, followed by the chicken thighs. Pour the vinegar mixture over the top of the chicken and close the lid securely.

Refer to the manufacturer's guidelines for pressure cooking, selecting a high-pressure setting and setting the timer for 10 minutes. Allow 10 minutes for the pressure to build up.

Prepare a baking sheet by lining it with aluminum foil.

Release the pressure using the quick-release method, following the manufacturer's instructions and taking about 5 minutes. Remove the lid and use tongs to transfer the chicken thighs to the prepared baking sheet, skin-side up.

Select the Sauté function on your pressure cooker and cook until the sauce thickens, taking 3 to 5 minutes.

Position an oven rack about 6 inches away from the heat source and preheat your broiler to its highest setting.

Cook the chicken under the preheated broiler until the skin becomes crispy, taking 6 to 8 minutes. Transfer the chicken to a serving plate and spoon the sauce over the top. Garnish with scallions.
