  • 1 (16 ounce) jar picante sauce
  • 1 1/4 cups dry lentils
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon lime juice

Preheat the pressure cooker by turning it on and selecting the Saute function. Allow a minute for the unit to heat up, then add olive oil and let it sit for another minute. Next, introduce the carrot, onion, bell pepper, and jalapeno into the pot; cook for 2 minutes, stirring occasionally. Add garlic and continue to sauté for a mere 30 seconds before hitting the Cancel button.

Now, pour in the broth, picante sauce, lentils, taco seasoning, and cumin. Mix everything together thoroughly to avoid any lumps or uneven distribution of ingredients. Close the lid securely and make sure it is locked in place. Refer to your pressure cooker's instructions for the recommended high-pressure setting and set a timer accordingly, in this case, 6 minutes.
