Instant Pot Spiced Pilau Rice
Ingredients
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon cumin seeds
  • 1/4 cup diced red onion
  • 3/4 tablespoon garam masala
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1 1/2 cups vegetable broth
  • 1 cup uncooked basmati rice, rinsed and drained
  • 1/2 cup frozen peas and carrots
  • 1 bay leaf
Instructions
1
Begin by activating your pressure cooker, choosing the Saute function to heat up the pot. Add a generous amount of oil and let it melt, then add cumin seeds and stir until they start to sizzle and release their fragrance. Next, introduce the onion into the mix and cook until it begins to soften, taking around 2 minutes. At this point, add a blend of spices including garam masala, turmeric, and salt to enhance the flavor.
2
Add a substantial amount of vegetable broth, followed by rice, frozen peas and carrots, and bay leaf. Mix everything together until well combined.
3
Once you've finished preparing the ingredients, close and lock the lid of your pressure cooker. Refer to the manufacturer's instructions for selecting high pressure, then set a timer for 5 minutes. Allow an additional 10 to 15 minutes for the pressure to build up.
4
Release the pressure using the natural-release method, as specified by the manufacturer's instructions. This process can take anywhere from 10 to 40 minutes, depending on your specific cooker.
5
Finally, manually release any remaining pressure before unlocking and removing the lid. Take out the bay leaf and taste your cooked rice to determine if it requires any adjustments to the seasoning.
