Instant Pot Spanish Rice
Ingredients
  • 1 tablespoon avocado oil, or more as needed
  • 1/2 medium onion, finely chopped
  • 2 large cloves garlic, minced
  • 1 cup long-grain rice
  • 1 1/2 cups low-sodium chicken stock
  • 1/2 cup tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1 pinch cayenne pepper

Turn on your pressure cooker and switch it to its sauté mode, adjusting the heat setting accordingly.

Apply a thin layer of avocado oil to the bottom of the pressure cooker's pot and cook the sliced onion over medium heat, stirring occasionally. This should take around 4 to 5 minutes.

Add minced garlic and continue cooking until it releases its fragrance, approximately 30 seconds later.

Next, add the rice to the pot and mix it with the oil until the grains are evenly coated. Use a gentle stirring motion to lightly brown the rice, about 2-3 minutes.

Now, pour in the chicken stock and use a spoon to scrape off any browned bits that have accumulated at the bottom of the pot.

Add a can of crushed tomatoes, salt, ground cumin, and a pinch of heat with the cayenne pepper to the pot.

Close the lid securely and ensure it is locked in place. Next, seal the pressure release valve and select the high-pressure cooking function on your pressure cooker.

Set a timer for 7 minutes, but allow an additional 10 to 15 minutes for the pressure to build up.

Once the cooking time has elapsed, carefully release the pressure using the quick-release method as instructed by your pressure cooker's manufacturer. This should take around 5 minutes.

After the pressure has been released, unlock and remove the lid from your pressure cooker. Finally, give the cooked rice a gentle stir before serving it hot.
