  • 4 thick slices bacon, cut into 1-inch pieces
  • 4 cups water
  • 2 tablespoons white vinegar
  • 4 cups chicken broth
  • salt to taste

Clean and prepare the collard greens by washing them thoroughly, then removing any tough stem parts. Cut the leaves into your preferred size.

Activate a versatile pressure cooking device, such as an Instant Pot, and switch it to the 'Saute' mode. Sear some bacon until it reaches a golden brown color and becomes crispy, approximately 5 minutes. Switch off the 'Saute' function. Add water and a splash of vinegar to the pot, making sure to scrape the bottom to release any stuck bits from the bacon. Add the chopped collard greens and stir them around so they're evenly coated. Pour in some chicken broth, adding a pinch of salt to taste. Close and secure the lid tightly.

Follow your pressure cooker's guidelines for setting high pressure, then set a timer according to the manufacturer's instructions for 5 minutes. Allow about 10-15 minutes for the pressure to build up naturally.

Release the built-up pressure using the natural-release method, as instructed by your device's manual, for 20 minutes. After that, quickly release any remaining steam using the quick-release method, as per your device's instructions, taking about 5 minutes. Remove the lid and unlock it before proceeding to season with more salt if needed.
