Instant Pot Shrimp and Broccoli Stir-Fry
Ingredients
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon brown sugar
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon minced garlic
  • 1 pound raw peeled and deveined shrimp
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 cups fresh broccoli florets
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds
Instructions
1
Combine soy sauce, oyster sauce, rice vinegar, sesame oil, brown sugar, Sriracha, and minced garlic in a small bowl until the mixture is well blended.
2
Transfer the sauce to a multifunctional pressure cooker, such as an Instant Pot. Add the shrimp and close the lid securely. Follow the manufacturer's guidelines to set high pressure; then, wait for 10 minutes before releasing the pressure.
3
In a separate bowl, whisk together cornstarch and cold water until you achieve a smooth consistency.
4
Carefully release the pressure using the quick-release method, taking approximately 2 minutes. Remove the lid and unlock it before adding the cornstarch mixture to the pressure cooker with the shrimp and broccoli. Switch to the Sauté function and cook until the sauce thickens and the broccoli reaches a crisp-tender texture, approximately 2 minutes.
5
Garnish the cooked shrimp and broccoli with chopped green onions and toasted sesame seeds.
