Instant Pot Shredded Chicken Tacos
Ingredients
  • 1/4 cup chicken broth
  • 1 cup picante sauce
  • 1 (4 ounce) can chopped green chilies
  • 2 tablespoons lime juice
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 (1 ounce) envelope chicken taco seasoning mix (such as McCormick®)

Combine chicken broth, picante sauce, green chiles, and lime juice in a versatile pressure cooking device. Add chicken and sprinkle taco seasoning mix over the top of the chicken. Close the lid securely and make sure it is locked in place. Follow the manufacturer's guidelines to set the pressure cooker for high pressure and schedule a 12-minute cooking time. Allow approximately 10-15 minutes for the pressure to build up.

Release the built-up pressure using the quick release method, as instructed by the manufacturer, for around 5 minutes. Remove the lid and select the keep warm function to maintain a low temperature.

Transfer the chicken to a cutting board and let it rest for 10 minutes.

Shred the cooked chicken and return it to the pressure cooker pot. Continue cooking for an additional 3 minutes, or until the chicken is heated through and ready to serve.
