Instant Pot Sausage and Cabbage Soup
Ingredients
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound sage pork sausage
  • 1 cup water
  • 1 teaspoon chicken soup base (such as Better than Bouillon®)
  • 1 russet potato, diced
  • 2 cups chopped cabbage
  • 1 pinch garlic salt, or to taste
  • 1 pinch ground allspice
  • ground black pepper to taste
  • 1/2 cup milk, divided
  • 1/2 cup half-and-half, divided
  • 2 tablespoons all-purpose flour
  • 2 teaspoons chopped fresh dill, or to taste

Turn on your pressure cooker and switch it to the Sauté mode. Place a tablespoon of butter into the pot and stir until it has fully melted. Then, cook the sliced onion in the hot butter for a few minutes, stirring occasionally, until it reaches a deep brown color. Remove the onion from the pot with a spoon and transfer it to a plate.

Next, add sliced sausage to the pot and cook, stirring frequently, until it is crumbly and nicely browned, taking about 5 minutes.

Add water and a chicken soup base to the pot with the sausage. Return the cooked onion to the pot, along with diced potato, shredded cabbage, minced garlic salt, ground allspice, and a pinch of black pepper. Close the lid securely and make sure it's locked in place.

Follow your pressure cooker's instructions to set the high-pressure mode, and then set the timer for 8 minutes. Allow about 10-15 minutes for the pressure to build up.

To release the pressure, carefully follow your manufacturer's instructions and use the quick-release method for about 5 minutes. Once you've released the pressure, unlock the lid and remove it.

Switch your pressure cooker back to the Sauté mode. In a small bowl, whisk together milk and half-and-half until well combined. Pour all but 3 tablespoons of the milk mixture into the pot, leaving a small amount behind.

In the remaining 3 tablespoons of milk mixture, whisk in some flour until it's fully incorporated. Then, pour the mixture into the soup pot and stir until heated through to your liking. Finally, adjust the seasonings as needed to taste.

To finish off the dish, garnish it with some fresh dill.
