Place the water in the inner compartment of your pressure cooker, a device designed to cook food quickly under high pressure. Position the metal grate inside the water.

Cut around the top of the pumpkin, creating a hole that allows you to insert your hand and access its interior. Remove the stem, then take out the seeds and stringy bits from within the pumpkin. Position the pumpkin with its cut side facing downwards on the metal grate. If your pumpkin is too large to fit in the pot, cut it in half and arrange both halves so they can be accommodated.

Close the lid of your pressure cooker, ensuring it is securely locked in place. Set the valve to seal, and according to the manufacturer's guidelines, select the manual mode and set a timer for 12 minutes. Allow 10 to 15 minutes for the pressure inside the cooker to build up.

Carefully release the pressure from the cooker using its quick-release mechanism, according to the manufacturer's instructions, which should take around 5 minutes. Unlock and remove the lid from your pressure cooker. Take out the pumpkin from the pot and place it on a rack, allowing it to cool enough to handle for about 5 minutes.

Scrape the flesh of the pumpkin from its skin and transfer it to a food processor or blender. Process until smooth
