  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 pound vegetarian ground beef substitute (such as Beyond Meat® Beyond Beef®)
  • 1 (15 ounce) can chili beans
  • 1 (14.5 ounce) can diced tomatoes
  • 2 tablespoons chili powder

Preheat your multi-functional pressure cooker, such as the Instant Pot, to its Sauté function.

Heat a generous amount of oil in the device and add sliced onions and bell peppers, cooking them until they become soft and tender.

This process should take approximately 3 minutes. Next, add minced garlic to the pot and cook for a shorter duration of about 30 seconds, allowing its fragrance to fill the air.
