  • 1 yellow onion, thinly sliced
  • 1 teaspoon garlic base (such as Better Than Bouillon® Roasted Garlic Base)
  • 1/2 cup water
  • 2 teaspoons all-purpose seasoning (such as Savory Spice® Wash Park Seasoning)
  • 1 1/2 teaspoons shallot salt (such as Savory Spice® Supreme Shallot Salt)
  • 1 1/4 pounds bone-in, thick-cut, frozen pork chops
  • 6 ounces portobello mushrooms, quartered
  • 1/4 cup whipping cream
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon browning sauce

Turn the pressure cooker to its sauté mode and wait for it to heat up. Once hot, add a small amount of butter to the pot and stir until melted. Add sliced onions and cook constantly, stirring occasionally, until they become soft and fragrant, approximately 5 minutes. Introduce minced garlic into the mixture and pour in water, stirring to combine.

In a separate bowl, blend all-purpose seasoning with shallot salt and sprinkle the mixture evenly onto both sides of the pork chops. Place the seasoned pork chops on top of the sautéed onions. Cancel any ongoing cooking process and ensure the lid is securely in place.

Follow the manufacturer's guidelines to set the pressure cooker for high pressure and schedule a 13-minute cooking time. Allow 10-15 minutes for the pressure to build up.

Release the built-up pressure using the natural-release method, as instructed by the manufacturer, for 12 minutes. Subsequently, release any remaining pressure using the quick-release method, as per the manufacturer's instructions, approximately 5 minutes. Remove the lid carefully and unlock it.

Transfer the pork chops to a plate, then cancel any ongoing cooking process and switch to sauté mode. Add sliced mushrooms and stir constantly until they are tender.

In a separate container, whisk together whipping cream, flour, and browning sauce until smooth. Add this mixture to the pressure cooker pot and allow it to thicken slightly, approximately 3 minutes. Ladle the mushroom gravy over the pork chops and serve immediately.
