Ingredients
- 1 (6 pound) pork butt roast
- 1 1/2 tablespoons salt
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 1 teaspoon ground black pepper
- 1/2 teaspoon chile powder
- 1/2 teaspoon paprika
- 2 tablespoons olive oil, or more to taste
- 1 cup orange juice
- 1 onion, coarsely chopped
- 4 cloves garlic, diced, or more to taste
Instructions
1
Remove any excess fat from the pork butt, then cut it into 2-inch cubes. Transfer these pork pieces to a large bowl for preparation.
2
In a separate small bowl, mix together the salt, oregano, cumin, black pepper, chile powder, and paprika to create a unique spice blend. Then, rub this spice mixture all over the pork cubes, ensuring they are evenly coated.
3
Next, lightly coat the seasoned pork cubes with olive oil and transfer them to a pressure cooker. Cover these pork pieces with a mixture of orange juice, sautéed onion, and minced garlic.
4
Place the lid on the pressure cooker and lock it securely. Bring the contents to full pressure over medium heat, allowing the pork to become tender and no longer pink in the center after approximately 60 minutes.
5
Allow the pressure to decrease naturally, taking around 15 minutes.
6
Once the pressure has decreased, remove the pork from the pressure cooker and shred the meat into tender, bite-sized pieces.
