  • 1 cup moong dal (split husked mung beans)

  • 1 teaspoon salt
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1 pinch ground turmeric
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped cilantro

Turn on your pressure cooker and switch to its sauté mode. Heat a generous amount of olive oil in the pot, then add sliced onions, minced garlic, grated ginger, and ground cumin. Cook until the vegetables are tender and fragrant, approximately 2 minutes.

Next, combine a sufficient amount of water with the moong dal lentils, dried coriander, salt, ground garam masala, a pinch of heat from cayenne pepper, and turmeric powder in the pot. Close the lid securely and ensure it is locked into place. Refer to your pressure cooker's instructions for high-pressure settings, then set the timer according to the manufacturer's guidelines - in this case, 15 minutes.

Allow 10-15 minutes for the pressure to build up naturally in the cooker, following the manufacturer's recommended procedure. Once the pressure has built up, carefully release it using the natural-release method as instructed by your pressure cooker's user manual - this may take anywhere from 10 to 40 minutes.

Once the pressure has been released, carefully unlock and remove the lid from your pressure cooker. Stir in a squeeze of fresh lemon juice and chopped cilantro to complete the dish
