Instant Pot Mexican Beef Tacos
Ingredients
  • 1/4 pound bacon, cut into 1 1/2-inch pieces
  • 1/2 pound beef sirloin, cut into small pieces
  • 1/2 pound carne molida (finely chopped beef)
  • 1 white onion, shaved into slivers
  • 2 (1.41 ounce) packages sazon seasoning with cilantro and achiote (such as Goya®), divided
  • 2 Roma tomatoes
  • 1 jalapeno pepper, sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin

Turn on the pressure cooker and switch it to its Saute mode. Place the bacon, beef sirloin, carne molida, and onion inside the cooker and let it cook for 10 minutes. Add a packet of sazon seasoning and stir everything together. Press the Cancel button to stop the cooking process temporarily. Securely close and lock the lid.

Proceed with high-pressure cooking according to the manufacturer's guidelines, setting a timer for 15 minutes. Allow 10-15 minutes for the pressure to build up.

Release the pressure naturally, following the manufacturer's instructions, for 25 minutes. Then, use the quick-release method to release any remaining pressure, taking about 5 minutes.

Open the lid and carefully remove it. Add Roma tomatoes and a jalapeno pepper to the cooker, then close and lock the lid again. Set the pressure cooker for high-pressure cooking once more, with a 5-minute timer. Allow another 10-15 minutes for the pressure to build.

Release the pressure using the quick-release method, taking about 5 minutes. Remove the lid and unlock it.

Carefully remove the tomato skins and crush the tomatoes using a spoon or your hands. Add any remaining sazon seasoning, chili powder, and cumin to the mixture, stirring everything together.
