Instant Pot Marinara Sauce

  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 1/4 cup dry red wine
  • 1 (28 ounce) can diced tomatoes
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 3/4 teaspoon sea salt
  • freshly ground black pepper to taste
  • 1 pinch red pepper flakes
  • 1 bay leaf

Activate your pressure cooker and choose the Saute mode to heat it up. Next, add a generous amount of olive oil and sliced onion into the pot; cook until the onion becomes translucent, taking anywhere from 3 to 5 minutes. Add minced garlic and cook until it releases its fragrance, approximately 1 minute later.

Now, pour in a good quality red wine and let it simmer until the liquid has reduced by half.

Add diced tomatoes and whole tomatoes to the pot, stirring gently to combine. Bring the mixture to a gentle simmer. Add a few sprigs of fresh basil, some dried oregano, chopped parsley, salt, pepper, a pinch of red pepper flakes, and a bay leaf to the pot. Close the lid and press the Keep Warm button.

Lock the lid securely in place and seal the vent to ensure everything stays inside. Set your pressure cooker to Manual mode and set a timer for 10 minutes. Allow about 10 to 15 minutes for the pressure to build up.

Release the pressure carefully using the quick-release method as instructed by your manufacturer, taking around 5 minutes. Unlock and remove the lid carefully. Discard the bay leaf that was added earlier. Use an immersion blender to puree the sauce to your desired consistency.
