Instant Pot Kielbasa and Sauerkraut with Potatoes
Ingredients
  • 2 slices bacon
  • 2 pounds fresh kielbasa, sliced into 2-inch pieces
  • 1 medium sweet onion, diced
  • 1/4 cup dark brown sugar
  • 3 large yellow potatoes, chopped
  • 2 (16 ounce) packages sauerkraut, drained
  • 1 1/2 cups chicken broth
  • 1 apple - peeled, cored, and diced
  • 1/2 cup beer
  • 1/2 teaspoon sea salt
Instructions
1
Start a multi-functional pressure cooker, such as an Instant Pot, and switch it to its Sauté mode. Add some bacon into the pot; cook until it reaches a crispy state, taking about 8 to 10 minutes. Use tongs to carefully remove the bacon from the pot and transfer it to a separate container.
2
Next, add some kielbasa to the pot; cook until it's lightly browned on all sides, which should take around 5 to 7 minutes. Remove the kielbasa with tongs and place it alongside the bacon in the container.
3
In the same pot, sauté some onions until they become soft and tender, taking about 2 to 3 minutes. Now, crumble the cooked bacon into the pot and stir in some brown sugar to add a touch of sweetness.
4
Add diced potatoes, sauerkraut, chicken broth, sliced apples, a type of beer, and salt to the pot. Mix everything together gently.
5
Close the lid of the pressure cooker and ensure it's securely locked in place. Follow the manufacturer's instructions to set the high-pressure mode, then set a timer for 12 minutes. Allow about 10 to 15 minutes for the pressure inside the cooker to build up.
6
After waiting for the specified time, release the pressure using a natural-release method for 10 minutes according to the manufacturer's instructions. Then, carefully release any remaining pressure using a quick-release method. Finally, unlock the lid and remove it to reveal your finished dish
