Ingredients
- 2 pounds ground beef
- 1 cup dry bread crumbs
- 1/2 cup diced onion
- 1/2 apple - peeled, cored, and diced
- 1 egg
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/3 cup ketchup
- 2 tablespoons prepared yellow mustard
- 2 tablespoons brown sugar
Instructions
1
Create the meatloaf: Combine ground beef, bread crumbs, finely chopped onion, diced apple, beaten egg, garlic powder, salt, and pepper in a large bowl until everything is well incorporated.
2
Form the beef mixture into a loaf shape and position it on a large sheet of aluminum foil. Fold the foil upwards to create a makeshift loaf pan, encasing the meatloaf.
3
Place 1/2 cup of water into a pressure cooker and position the steam rack inside, with its handles facing upwards. Carefully place the meatloaf on top of the rack. Close and secure the lid; seal the vent according to the manufacturer's instructions. Set the pressure cooker to high, following the manufacturer's guidelines; set a timer for 25 minutes. Allow 10-15 minutes for the pressure to build up.
4
Position an oven rack about 6 inches away from the heat source and preheat the oven's broiler.
5
Release the pressure cooker slowly using the quick-release method, following the manufacturer's instructions - this should take around 5 minutes. Remove the lid and carefully transfer the meatloaf to a baking sheet, still on the rack.
6
Place the meatloaf under the broiler in the oven until it's nicely browned, taking about 5 minutes.
7
Simultaneously prepare the topping: Mix ketchup, mustard, and brown sugar in a small bowl.
8
Brush the meatloaf with the topping mixture and return it to the oven for another minute or two, until caramelized.
