Instant Pot Jamaican Beans and Rice
Ingredients
  • 1 tablespoon vegetable oil
  • 3 skinless, boneless chicken breasts, cut into bite-sized pieces
  • 1 cooking onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (15 ounce) can black beans, drained
  • 1 1/2 cups long-grain rice
  • 1 (8 ounce) can corn, or to taste
  • 1 cup coconut milk
  • 1 tablespoon Scotch bonnet hot sauce, or to taste
  • 2 teaspoons ground thyme
  • 2 teaspoons kosher salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons brown sugar
  • 1 teaspoon allspice

Preheat your pressure cooker to its multi-functional mode and switch it to the Saute function.

Next, heat some oil in the cooker and sauté diced chicken, chopped onion, and minced garlic until they release their aroma, about 1 to 2 minutes. Be sure not to let the garlic get too dark.

Now, add a mixture of broth, black beans, uncooked rice, frozen corn, coconut milk, hot sauce, dried thyme, ground black pepper, brown sugar, and ground allspice to the cooker. Stir everything together until it's well combined.

Close the lid and secure it tightly, then switch to high pressure. Close the pressure release valve and set a timer for 15 minutes.

As the pressure builds, allow about 10 minutes to pass before proceeding.

Once the pressure has been released naturally according to your cooker's instructions, unlock and carefully remove the lid.
