- 4 1/2 cups water
- 1/2 (16 ounce) package dry black-eyed peas - sorted, rinsed, and drained
- 2 tablespoons salted butter
- 1/2 medium onion, chopped
- 4 cloves garlic, minced
- 2 cups uncooked brown rice
- 2 1/2 cups chicken broth
- 2 cups diced cooked ham
- 1/2 cup chopped green onions
- salt and ground black pepper to taste
- 1 pinch cayenne pepper, or to taste

Combine water and black-eyed peas in a pressure cooker designed for efficient multi-tasking. Secure the lid tightly to prevent any accidental openings during cooking. Follow the manufacturer's guidelines for high-pressure settings and set a timer for 15 minutes to ensure optimal results. Allow an additional 10-15 minutes for the pressure to reach its peak level.

Switch to the 'Keep Warm' function and maintain it for 5 minutes before carefully releasing the pressure using the quick-release method as instructed by the manufacturer, taking approximately 5 minutes to do so. Once done, unlock and take off the lid.

Separate the cooked peas from their liquid and set them aside. Clean and dry the pressure cooker thoroughly before returning it to its original state.

Add a chopped onion, butter, and minced garlic to the cooker. Engage the 'Saute' function and cook for 2 minutes, stirring occasionally to prevent burning. Add brown rice and mix it well with the other ingredients. Continue cooking until the rice turns golden brown, approximately 2 minutes later.

Add chicken broth, diced ham, chopped green onions, salt, and pepper to the cooker. Follow the manufacturer's instructions for high-pressure settings and set a timer for 22 minutes to achieve perfect results. Allow an additional 10-15 minutes for the pressure to build up.

The final dish should be moist but not overly soupy, and cook until heated through, approximately 5 minutes later.
