- 1/4 cup vegetable oil
- 1 medium white onion, chopped
- 2 cloves garlic
- 1 teaspoon dried Mexican oregano
- 1 pound dried pinto beans
- 8 cups water
- 2 teaspoons salt

Turn on your pressure cooker and switch it to its Sauté mode, allowing the device to heat up. Add a small amount of oil, followed by chopped onion and minced garlic; sauté for 5 minutes. Introduce dried beans and water into the pot, stirring to combine. Securely close and lock the lid of your pressure cooker.

Set the pressure cooker to its High Pressure setting, then set a timer for 35 minutes. Allow at least 10-15 minutes to pass before releasing the pressure naturally, as instructed by your device's manufacturer.

Once the pressure has been released, carefully unlock and remove the lid from the pressure cooker. Check on a bean to see if it's tender; if not, close and lock the lid again, then cook for an additional 5 minutes at high pressure.

Carefully pour off some of the liquid from the cooked beans, reserving 2 cups. Return the beans to the pot and add a pinch of salt, along with half of the reserved liquid. Use an immersion blender to puree the beans until they're smooth, adding more cooking liquid as needed.

Switch your pressure cooker to its Keep Warm or Slow Cooker function, allowing the beans to remain warm until you're ready to serve.
