- 1 (12 ounce) package cranberries
- 1/2 cup orange juice
- 1/2 cup water
- 1 piece cinnamon stick
- 1/4 teaspoon vanilla extract
- 1/2 cup white sugar, or more as needed
- 1/2 cup brown sugar
- 1 pinch salt
- 2 slices of orange peel, using a peeler

Combine cranberries, freshly squeezed orange juice, water, and a fragrant cinnamon stick in your pressure cooker. Secure the lid tightly.

Set the pressure cooker to high pressure according to its manufacturer's guidelines; set a one-minute timer. Wait for about 10 minutes, allowing the pressure to build up.

Once the cooking cycle is complete, switch off the pressure cooker immediately. Overcooking the cranberries can cause their skins to burst.

Open the lid using the natural-release method, as instructed by your pressure cooker's manufacturer. Allow about 7 minutes for the pressure to release.

Carefully lift off the lid and return your pressure cooker to operation. Switch it to the Sauté function and combine white sugar and brown sugar with the cranberry mixture, stirring until the sugars have dissolved. Add a pinch of salt to taste.

Immediately switch off your pressure cooker once the sugar has melted. If you prefer a sweeter cranberry sauce, taste it and add an additional tablespoon of sugar at a time.

Transfer the cranberry mixture to a serving dish and garnish it with orange peel. Serve your warm or chilled cranberry sauce, which will thicken as it cools.
