Instant Pot Ham and Lentil Soup
Ingredients
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup carrots, 1/4-inch slices
  • 2 cloves garlic, minced
  • 1 1/2 cups diced cooked ham
  • 1 cup lentils
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 4 cups chicken broth
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • 1 small bay leaf
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon ground black pepper
Instructions

Turn on your pressure cooker and choose the Sauté mode.

Add a small amount of oil to the pot and let it heat up for a few minutes.

Next, add sliced onion and chopped celery to the pot and sauté for 2 minutes.

Then, add sliced carrots to the pot and continue to cook for another 4 minutes.

Add minced garlic to the pot and cook for an additional 2 minutes, stirring constantly.

Now, add diced ham, lentils, dried basil, oregano, and thyme to the pot. Stir well to combine.

Pour in chicken broth, tomato sauce, and water into the pot, followed by a bay leaf.

Close the lid of your pressure cooker and make sure it is securely locked in place.

According to the manufacturer's instructions, select high pressure and set a timer for 8 minutes.

Allow 10 to 15 minutes for the pressure to build up naturally.

Once the pressure has released, carefully remove the lid from your pressure cooker. Discard the bay leaf that was added earlier.

Stir in some salt, lemon juice, and pepper to taste.
