Instant Pot Filipino Salmon in Coconut Milk
Ingredients
  • 1 tablespoon vegetable oil
  • 3 drops sesame oil, or to taste
  • 1/4 cup diced onion
  • 2 diced green onions, white and green parts
  • 1 teaspoon garlic powder
  • 1/2 cup diced fresh tomato
  • 2 tablespoons fish sauce
  • 1 cup vegetable broth
  • 1 (11 ounce) salmon side, bones removed with pliers
  • 1 cup coconut milk
  • 1 1/2 cups broccoli florets
  • 1 cup chopped kale
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preheat your pressure cooker, such as the Instant Pot, by switching it to its Saute mode.

Heat a generous amount of vegetable oil in the pot and add some sesame oil to give it an extra flavor boost. Throw in the chopped onion and green onions, and sauté them for about a minute to soften their edges.

Add a pinch of garlic powder to the pot and cook for another minute, stirring constantly to avoid burning.

Next, add in some diced tomatoes and a splash of fish sauce - the combination will elevate your dish to new heights. Continue cooking until everything is heated through, which should take around 2 minutes.

Now it's time to add the liquid base of your dish - pour in some vegetable broth, making sure not to spill a single drop. Place the salmon fillet on top of the liquid and vegetables, making sure it's fully submerged.

Switch off the Saute mode by pressing Cancel and close the lid. Make sure it's locked tightly to prevent any accidents.

According to your pressure cooker's instructions, set the high-pressure setting and set a timer for 5 minutes. Be patient - it may take around 10-15 minutes for the pressure to build up.

Once you've waited patiently, release the pressure using the natural-release method - this will help prevent any sudden releases of steam. Allow it to take around 10-20 minutes.

Remove the lid carefully and pour in a generous amount of coconut milk. Add some broccoli and kale to the pot, mixing them gently around the side of the salmon fillet. Be careful not to break up the cooked salmon, as this can be a real bummer.

Sprinkle some salt and pepper over the top of your dish, giving it that extra oomph.

Replace the lid and set the vent to "Sealing" mode.

Switch your pressure cooker to its Steam function and steam for 2 minutes.
