- 2 (4 ounce) skinless, boneless chicken breasts, cubed
- 3/4 teaspoon garlic salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1/4 cup salsa
- 1/2 cup black beans, drained
- 1/2 cup corn

Combine cooked rice, water, taco seasoning, and tomato powder in a 7x3-inch cake pan or oven-safe bowl. Make sure the rice is evenly coated with the mixture by stirring thoroughly.

Next, season chicken breast pieces with garlic salt and black pepper in a bowl. This will add flavor to the dish.

Now, heat up a multi-functional pressure cooker such as the Instant Pot and switch it to the Saute function. Melt some butter in the pot, then add salsa and chicken; stir everything together.

Transfer black beans and corn into two separate small silicone bowls. Position the bowls on either side of the Instant Pot, with the chicken pieces in between them for a neat arrangement. Place an elevated trivet inside the Instant Pot to create space. Set the container of rice on top of the trivet, making sure it's secure.

Close and lock the lid of the Instant Pot. Follow the manufacturer's instructions to select high pressure according to your specific model, and set a timer for 4 minutes. Allow about 10-15 minutes for the pressure to build up.

Once the pressure has released naturally, according to the manufacturer's instructions, which should take around 11 minutes, unlock and remove the lid. Carefully lift the rice off the elevated trivet.

Remove the trivet from the Instant Pot and blend the corn and black beans together with the chicken mixture.

Divide cooked rice into 4 serving bowls, then top each bowl with an equal amount of the chicken mixture.
