- 3 slices bacon, chopped
- 1/2 cup chopped onion
- 3 tablespoons minced jalapeno pepper
- 1 tablespoon minced garlic
- 3 cups water
- 3 cups chicken broth
- 1 pound dried black beans
- 1/4 cup red wine vinegar
- 1 (1.41 ounce) package sazon seasoning (such as Goya®)
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 bay leaf
- salt and ground black pepper to taste
- 2 limes, cut into wedges, or to taste
- 1/4 cup chopped cilantro, or to taste

Turn on the pressure cooker and switch it to its Saute mode. Place the chopped bacon inside and cook until it reaches a nice brown color, approximately 5 to 8 minutes. Next, add the chopped onion and jalapeno to the pot and continue cooking until they become tender, roughly 5 minutes more. After that, add a few cloves of minced garlic and cook for an additional 30 seconds.

Now it's time to add the main ingredients. Pour in some water, followed by chicken broth, dried beans, white vinegar, a packet of sazon seasoning, ground cumin, dried oregano, and a bay leaf. Stir everything together to combine the flavors. Close the lid of the pressure cooker, ensuring it is securely locked in place, and switch to its Manual mode. Set the timer for 40 minutes.

Allow about 10 to 15 minutes for the pressure inside the cooker to build up. Once this time has passed, carefully release the pressure using the natural-release method as instructed by the manufacturer. This process should take around 15 minutes.

After releasing the pressure, unlock and remove the lid from the pressure cooker. Stir the beans gently to redistribute them. Next, carefully lift out the bay leaf and discard it.

Finally, season the beans with some salt and pepper to taste. Your dish is now ready to be served.

Serve the beans in a bowl, accompanied by a wedge of fresh lime on the side. Garnish with some chopped cilantro to add a pop of color and freshness to your dish.
